...Sandrine May set out to restore an old shop in the small town of Lydd in the Romney Marsh, Kent. The shop used to belong to Mrs Bird, a local character who lived there for nearly fifty years.
The locals would be quite intrigued: "What are you going to do with Mrs Bird's old place..?" they would eagerly ask.
The community of Lydd was quite bewildered, a few months later, to witness the opening of a chocolate shop on the village square, straight opposite the churchyard! The French name, "Madame Oiseau", was of course inspired by the previous owner.
This was no ordinary chocolate shop, Sandrine, a self-taught chocolatière, started creating marvels by hand in the little chocolate kitchen at the back of the shop, very quickly, the word spread that something quite special had happened in Lydd.
